THE BIRTH OF NOROBATA

The meaning of the name Norobata is built upon two components; "No" stands for Nordic, and "Robata" represents a hot charcoal grill with origins in Japan. The concept we offer is a Nordic charcoal grill with influences from Japan and Peru.

The Robata grill is fired with Bincho-tan, a type of charcoal, also known as white charcoal, produced from Japanese oak.
The production technique of Bincho-tan originates from the Wakayama region in the Kansai area of southern Japan. What's unique about this type of charcoal is that it doesn't emit any odors during grilling.

The meal at Norobata is all about sharing dishes, trying different things, and interacting with our chefs and servers. We want to invite you and your companions into our world, encouraging you to immerse yourselves in our fresh flavors and new combinations.

Our Nordic heritage and curiosity about new cuisines and tastes do not satisfy our hunger for development. Since a cornerstone of the concept is sustainability, we work with ingredients that have a long cooking time. We also refine overproduction from farmers and suppliers directly linked to the "from root to shoot" lunch concept, which aims to minimize waste for a more sustainable society.
