Our food is prepared using a Japanese grilling method called Robatayaki, with Nordic flavors also inspired by Japan and Peru.

THE BIRTH OF NOROBATA

The meaning behind the name Norobata consists of two components: No = Nordic, Robata = hot charcoal grill, originating in Japan. The concept we present is a Nordic charcoal grill with influences from Japan and Peru.
 
The Robata grill is lit with Bincho-tan, which is a kind of charcoal,
also called white charcoal, that is produced from Japanese white oaks.

The technique used to produce Bincho-tan has its origin in the area around Wakayama in the Kinsai region of southern Japan. What
is unique about this kind of charcoal is that it does not give off any odors when used for grilling

A meal at Norobata is all about sharing the food, preferably trying
several different dishes in dynamic interaction with the chefs and the service. We welcome you and your party into our world, so that we can introduce you to our fresh flavors and new combinations.

Our Nordic heritage and curiosity about new kitchens and flavors keep us continually hungry to innovate. A foundation of our concept is sustainability, so we work with raw materials that have a long cook time. We also refine overproduction from farmers and distributors that are directly connected to the lunch concept “from root to stem” which refers to the minimizing of waste, for
a more sustainable society.
